Cover Cake Photo 1

❄️ Winter spice is a great way of keeping your insides nice and warm this winter! Also, a lot of it has been seen to have some benefits to your mood (however minor) with these spices giving a lovely soothing feeling.

🐴 At the Prancing Pony Bakery, we are obsessed with 'spiced' things and so, a winter spice cake is only the next great option. This one though is a recipe - it's nice and simple and you can show off your skill for baking at home this Christmas!

This cake feeds 6-8 people whilst taking around 45 minutes to an hour to prepare and cook with a further half an hour of cooling time and five minutes of assembly time.

You Will Need:

  • 200g Light Brown Sugar

  • 2x Tbsp Golden Syrup

  • 200g Margarine

  • 2x Tsp Ground Cinnamon

  • 1x Tsp Whole Cloves

  • 1x Tsp Whole Green Cardamom

  • 1x Juicing Orange

  • 4x Tbsp Apple Sauce

  • 1x Tsp Baking Powder

  • 200g Self Raising Flour

  • 100g Orange Marmalade

How To:

  1. Preheat your oven to 180/C and line 2 medium cake tins with some margarine, pasting it generously all over the bases and sides

  2. Mix together your margarine, syrup and sugar, adding your spices into the mix so they are thoroughly blended into the mixture

  3. Zest and juice your orange and add those to the mixture too - continuing to mix everything in

  4. Add in your apple sauce, continuing to mix (especially if your apple sauce is chunky and not smooth - you want to make sure those chunks are gone)

  5. Sift in your flour and add your baking powder to the mix and whip up your batter - the fluffier the better

  6. Split your mixture between your two cake tins and place them in the oven for 30-35 minutes

  7. Once out, give them half an hour to completely cool

  8. In the meantime, grab some orange marmalade, get 100g of it and use a fork or a spoon to mix it up, breaking it down so that it resembles more of a spread. If it's too thick, add a splash of water to it

  9. When your cakes are cooled, take one of them and carefully slice the top of it so that the whole cake is the same in height (use a very sharp knife to do it, it'll be easier). Then, spread your marmalade on to it, do not press it down, your marmalade should be spreadable. After this, place the other cake atop of this marmalade topped one

  10. Enjoy your cake!

🍊Orange goes so well with spices. If you would like to replace cardamom with something else, you can replace it with the same amount of ginger, or even black pepper if you're feeling brave. The orange and cinnamon flavour is so good and something different to the usual requests of ginger and the syrup makes the whole thing moist and moreish. It is genuinely lovely! 🍊
