My Healthy Vegan Pizza!
· In Recipes

I love pizza but as someone who isn't a fan of meats, I need to make it vegetarian, and as someone who has to also feed vegans, I need to make it vegan atop of that. Here at The Prancing Pony Bakery, the vegan aspect of our message is really a way of life. Hopefully, from this, you can get something moreish, filling and something that you can brag has been made entirely from scratch (whilst also not being too difficult!)

This recipe feeds 2-4 people and takes about 30 minutes to prepare and a further 35-40 minutes to cook

Part 1: Pizza Dough

You Will Need:
400g "00" Flour
1 Tsp Salt
1 Tsp Ground Black Pepper
1 Handful Chopped Fresh Coriander
1 Cup Room Temperature Water
1 Tbsp Oil
How To:
Put everything except the water into a mixing bowl and mix together to form a crumbly flour mix
Slowly add the water and continue mixing so that a dough begins to form - it should have a slightly wet and sticky texture, ready to be stretched out
Stretch and roll it out to the shape you would like (oil your rolling pin - you will thank me)
Place it on a sheet of greaseproof paper that lines a baking tray - set it aside for a bit, leaving it at room temperature

Part 2: Homemade Tomato Sauce!

You Will Need:
200g of Your Favourite Tomatoes (any will do - I used plum tomatoes as they are my favourite!)
1 Tbsp Ground Black Pepper
1 Green Chilli (optional)
1 Tbsp Golden Syrup
20ml Dairy Free Cream or Milk
10g Fresh Ginger
How To:
This part is so easy! Put everything into a blender and blitz it together
Once a thick and creamy sauce-like mixture is formed, apply it with a spoon or spatula to your pizza dough, leaving a half inch around the end for a crust.

Part 3: Your Veggies and Vegan Cheese

You Will Need:
100-150g of Mushrooms of Your Choice (I've used a mixture of all kinds)
1 Red Pepper
25g Red Jalapeño Peppers (optional)
1 Handful of Sweetcorn
150g Grated Vegan Cheese

How To:
Preheat your oven to 200/C
Chop your mushrooms into thin slices and do the same for the peppers
Apply your mushrooms to the pizza first (as they are the biggest)
Scatter your sweetcorn (so that the corn will cook into the other veggies rather than falling off because they're on top)
Scatter your peppers so that they mostly cover the pizza (this will provide a nice and tasty cover to the other ingredients)
Apply a generous (but not suspicious) helping of vegan cheese to the top of the pizza

Cooking:
Grab a teaspoon of dairy-free/plant-based milk and brush the crusts of the pizza
Cook the pizza in the oven for 30-40 minutes
Remove from the oven and enjoy!
Note: (You can also use black olives and basically any other vegetable you like, but please remember to keep your vegan cheese layer on top of everything...)

I've scattered some black pepper atop of mine because yes, I love black pepper on things!

I'm sure you're going to have fun with your pizza, it's a great way to eat lots of veggies in one dish and because basically none of this is massively processed, you know you're being healthy. Who knew that a guilty pleasure dish could be so good for you when made in your own home!
