Introducing Cumin Biscuits!
· In Flavour Updates

There is something rather wonderful about experimenting with spices. A small addition to an otherwise familiar recipe can completely change its character, and that is precisely what I've been doing in the kitchen at The Prancing Pony Bakery.
This time, I'm introducing something a little different to the biscuit collection: cumin biscuits.
Now, I know what you might be thinking. Cumin? In a biscuit? Surely that's a spice better suited to curries and savoury dishes? Well, perhaps, but I've always thought it a shame to restrict an ingredient to one particular corner of the kitchen.
Cumin has a beautifully warm, earthy flavour, with a slightly nutty quality that makes it particularly interesting when paired with something sweet. Unlike the more familiar flavours of vanilla or chocolate, cumin brings a savoury depth that balances the sweetness of the biscuit rather than competing with it.
And that, I think, is what makes it so appealing.
Something a Little Different ❤️

If you've already tried my ajwain biscuits, you'll know that I have something of a fondness for experimenting with spices that aren't traditionally associated with British baking.
Cumin follows a similar philosophy, although the flavour itself is quite different. Whereas ajwain has a distinctive sharpness and herbal quality, cumin is warmer, earthier and a little more mellow.
I've kept the biscuit itself true to the style I've been developing here at the bakery: a crisp, crumbly texture that sits somewhere between a traditional digestive and a shortbread biscuit.
The intention isn't to overwhelm the palate with spice, but to allow the cumin to make itself known gradually. A little sweetness, a little warmth and something interesting to linger over with a cup of tea or coffee.
After all, a biscuit ought to be enjoyed rather than hurried through.
Keeping Things Simple 👩🍳

As with everything I make at The Prancing Pony Bakery, these new biscuits are entirely vegan and prepared in small batches.
I've never been particularly interested in making things unnecessarily elaborate. Some of the loveliest baked goods are also the simplest, relying on a handful of ingredients that work well together.
The cumin biscuits are very much in keeping with that approach. No extravagant decorations or complicated combinations of flavours. Just a traditional-style biscuit with an ingredient that deserves a little more attention.
I rather like the idea of taking something familiar and giving it an unexpected twist.
What's Next? 🤔

The cumin biscuits will be joining the existing collection alongside favourites such as vanilla, ginger, cocoa and ajwain.
I'm particularly interested to see what people make of this latest addition. Cumin might not be the first flavour that comes to mind when choosing a biscuit, but perhaps that's part of its charm.
And who knows? It might even encourage a few people to reconsider what belongs in the biscuit tin.
Until next time, happy biscuit eating!
